Hi, hi, hi!!!! I am currently sitting in Sacramento, California and let me tell you…I love it here. I’ll be in Cali for the next week and I am highly considering not leaving. While I have a few moments to spare, I wanted to share this fig newton recipe with you! I posted about these last week on Instagram and I had SO MANY PEOPLE reach out asking for the recipe. You guys are awesome!

Healthier Fig Newtons (GF,V)
Crust:
- 1 ripe banana, mashed
- 1/4 C maple syrup
- 2 1/4 C oat flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of sea salt
Filling:
- 1 Cup Black Mission Figs*
- 1/2 C Golden California Figs*
- Juice of 1/2 a lemon
- 1 T maple syrup
- 2 T coconut flour**
- 1/4 C water
- 1 tsp cinnamon
Preheat the oven to 350 degrees. Grease an 8×8 pan. Combine filling ingredients into a food processor. In a large bowl, mash the banana and stir in maple syrup. Stir in oat flour, cinnamon, baking powder, baking soda, and sea salt.
Divide the dough in two balls.
Press one if the dough balls into the pan. Spread the filing over the first layer of dough. Next, crumble the next dough ball over top the filling.
Bake for 15-20 mins – until a toothpick comes out clean! Let cool for 10 minutes before devouring the whole pan. 🙂
* You can use any type of figs you want!
** Add more or less oat flour based on the thickness of the filling. Sometimes the water can make it a little too runny!
