Hiiiii! It’s been a while…two weeks actually. I’m so sorry! I would say it’s been so crazy over here, but that’s not true. The truth is I stare at a computer screen all day at work and the last thing I want to do when I get home is stare at the computer again. Is this when would people say ” #firstworldprobs ” ? I feel like it is.
Anyways, lettuce take this recap back to March 25th, a Monday I think. I got out of my night class around 8. I was so exhausted and also very hungry so I threw a bunch of things into a mixing bowl and called it a salad. Sometimes the craziest concoctions are the best kind.
Tuesday on my way to work I snapped this picture. I love how pretty our campus is!
I was super excited to eat my lunch for the day. I picked up some roasted veggies with an almond butter sauce and grain-free chips from Beet Box Produce in town. It was super tasty and definitely my kind of “fast-food”.
Wednesday I was feeling less than stellar but I did enjoy reading on the front porch in the sunlight.
A little later I thew together a big salad with a veggie burger, unsweetened dried mango, tomatoes, pumpkin seeds and for the dressing I just used a little lime juice and olive oil. I also had some plantain chips and sweet potato crackers on the side. This was honestly one of the best salads!
Honestly, I’m starting to get confused on when I did what. Note to self: don’t take 2 weeks to write a recap post. At some point last week I took Owen on a long walk!
One morning I had a green smoothie and it was soooo good!
🍍🌱PINEAPPLE MATCHA SMOOTHIE🌱🍍 1/2 frozen banana, 1 tsp @matchalove matcha, 1 scoop vanilla JP+ complete, 1 C oat milk, 1/2 C frozen pineapple – BLEND! Top w/ sprouted grain-free granola & superfood seeds!👏🏼
I made lemon and dill salmon patties, brussels sprouts, sweet potato fries, and guacamole for my family one night and I ate some leftovers for lunch one day! The salmon patties were a crazy random concoction but I think they turned out great.
Thursday I got to take my dad to an event in Glasgow to listen to the president of the company I partner with speak. It was so much fun and I am so glad I got to take my dad to meet some of the people I love so much.
Friday morning started bright and early with a workout and my favorite little workout buddy. After I showered off I met one of sweetest friends for coffee!
The rest of Friday was spent at work, finishing up some internship things, and then driving to Lexington to see one of my best friends from high school. Once I got to Lexington we headed to a cool brewery for some drinks before heading back to his house to watch the Kentucky game with his roommates. Right after the game ended and Kentucky one the streets were flooded with college students screaming and cheering. I was very happy to be an observer rather than a partaker.
Saturday I woke up…with almost 2 hours of sleep….and all I could think about was coffee. I got ready and we went to grab coffee and I took it upon myself to find a juice place. Luckily there was one close! The people who worked there were less than kind but the juice was amazing.
We had brunch at Carson’s and it was so good! They give you a lot of food so I could only eat a little bit but the potatoes were my favorite part. They were fried in truffle oil!
I was so exhausted and wanted to beat the thunderstorm so I made my way back home after brunch!
The rest of Saturday was spent snuggled up in my pajamas with coffee, half asleep.
Sunday morning began bright an early with a workout, church, and coffee in the sunshine. After downing a few cups of coffee, I went to the grocery store with my mom and sister.
That evening I met a dear friend at the park to go on a walk. It was so great getting to catch up with him! We hadn’t been in contact for a while and it felt really nice to be able to talk to my friend again.
Once I got home I whipped up a salad for dinner, threw on my pjs, and watched Gilmore Girls.
Monday I got up early for a workout, went to work for a few hours, and then headed home for lunch. I had a random taco type salad for lunch before leaving for work again. This salad had: spring mix, cajun Safe Catch tuna, tomatoes, salsa, guacamole, and quinoa with black beans.
After work I booked it back home!
It was the most beautiful day to sit outside & plan out the life of your dreams – with snacks, obviously. What do you think when you hear the words “Network Marketing”? Do you think scam? Some kind of scheme? Shady? Because I used to. USED TO. No one tells you the personal growth that comes with multi-level marketing. No one tells you you’ll be surrounded by a community of supportive & like-minded people. No one tells you you’ll get to plan your dream life at 23 rather than waiting until your 65 & retired. No one tells you about the beauty of residual income. No one tells you how much CONFIDENCE you will gain or how BRAVE you will become. No one can tell you all of this – you just have to take a leap of faith & find out for yourself.
A little later I made Alaskan Sockeye salmon for my family for dinner. This was another random concoction that turned out great:
1/2 C olive oil, 1/4 C tamari, 1 T ginger (that squeezable packet kind), 2 T crushed garlic, juice of 1 lime, 2 T honey, salt and pepper
I broiled it for about 15 minutes on high
I threw mine over some spring mix with roasted broccoli. I also ate half a gluten free everything bagel!
I don’t remember what I did Tuesday so let’s skip over to Wednesday. Wednesday I woke up bright and early for a workout and sipped on a smoothie!
BLUENANA SMOOTHIE: 1/2 C frozen blueberries, 1/2 frozen banana, cinnamon, 1 scoop vanilla complete protein, 1 c almond milk – blend!
I spent the day at work and then church! And then I had the same smoothie the next day after a workout. I tend to thrive off routine and this week was just that! Haha!
