Hiiiii! Happy last day of 2018! I am sitting on my bed watching Fuller House, drinking coffee, and ready to write! Also, Fuller House is my guilty pleasure. I know it’s kind of a “kid show” but I have watched it 5 times through. No shame. It brings me so much happiness!! I can’t help but laugh when I watch it.
After Christmas my sister and I had to babysit my cousins for 3 days straight. So, this recap may be slightly boring since everyday was pretty relaxed but hey, that’s life! Not everyday can be super exciting!
Wednesday the weather was absolutely perfect. While my little 4-year-old cousin jumped on the trampoline, I did a quick band-workout in the driveway.
Post-workout snuggles with my sister and my little baby cousin.
A little while later I had Amy’s Organic Tomato soup and Simple Mills cheddar almond flour crackers. A healthier take on one of my favorite meals as a child. 🙂
While the baby was sleeping in the afternoon, I read my book “Kind is the New Classy”. I am forever obsessed with Candace Cameron Bure. She is the epitome of kind and classy! Basically all I want to be <3
My sister and I got back to my parent’s house around 6:15 and I whipped up a SUPER simple dinner. Leftover Christmas ham, eggs, a paleo pancake, all drizzled in maple syrup.
Thursday was another day of babysitting!
For lunch I made a big bowl of protein oatmeal. (1/2 C oats cooked in cinnamon and 1 C of water – once the water was absorbed I stirred in 1 scoop of vanilla protein powder, 1 T of peanut butter, and half a banana.)
For dinner my mom made a chorizo chili that I topped a golden sweet potato with. Delicious!
Friday was all about…babysitting…again! Haha! It was another beautiful day so we spent a good portion of it outside.
I was EXHAUSTED Friday night and fell asleep watching the movie Dumplin on Netflix with my sister. That movie was super cute!
Saturday morning began bright and early with coffee and a grocery store run with my mom.
My mom also treated me to an almond milk cappuccino 🙂
For lunch I had a Dr. Pragers vegetable burger, sauerkraut, carrots, and butter lettuce drizzled with Tessemae’s ranch.
I ran a few more errands with my mom and sister that afternoon and I couldn’t help but laugh at the difference between my sister and I…
She is all about Doc Martins, large sweatshirts the Kardashians wear, and gold hoops where as I look like I am ready to go on a hike at all times haha! But I wouldn’t trade being her sister for anything 🙂
For dinner that night we had salmon, rice, and roasted brussels sprouts/broccoli.
And here is Owen <3
Sunday morning we had family coming in for the last of the Christmas celebrations! I went on a quick walk with Owen before they got there. My aunt, sister, and I spent the day making dream boards! So fun!! 🙂
Mine is still a work in progress, but so am I so it all works out!
The night ended with my mom’s homemade chicken noodle soup and homemade chocolate chip cookies!
This morning was an early one! I sipped on coffee, ran a few errands with my mom and sister, and then had a late breakfast/early lunch of eggs, bacon, and the leftover vegetables.
Now I am laying down with sweet Owen boy waiting for the rain to subside so we can go on a run together.
I hope you enjoy your last day of 2018!! I can’t wait to see what 2019 has in store 🙂
That chorizo chili looks amazing. What an awesome idea to top your potatoes with them! I also love the idea of making dream boards together. Such a fun activity!
I love sweet potatoes with just about anything! 🙂 and thank you!! It is soooo fun to do!! <3 Have a great weekend!
Hope you have a great weekend, too!! <3
