Happy Wednesday, friends! I opted out of my typical 3-mile walk with Owen this morning in order to catch up on homework and this blog post. Owen keeps bringing me all his toys and whining so I don’t think we was very happy I skipped our walk. I have been feeling a little behind on school because when I finally finish all the work I need to do for the day it’s close to 8:30 or 9 and I can barely keep my eyes open! So, that leaves me to wake up at 5:30 in the morning and get caught up. I don’t mind since I am a morning person but I would rather be outside walking than staring at my computer screen.
Oh well 🙂
Lettuce take this recap all the back to last Wednesday!
I was up at 2:30…ew I cringe just typing that…to get ready for my flight to Tampa. The ladies I was going with were picking me up at 3:30 so I wanted to make sure I had everything I needed the last minute. Luckily by the time we got to the Nashville airport it was an easy check-in and the line through security was very short. I guess there aren’t a lot of people who enjoy 5:30 a.m. flights 😉 Luckily we made it to our gate just in time and the time flew by on the 1 hour and 45 minute flight.
Once we got into Tampa we all had only one thing on our minds…FOOD. We stopped by First Watch in downtown Tampa for brunch. I ordered scrambled eggs over veggies with bacon and no cheese. Plus, LOTS of coffee. PERFECTION!
After we ate we headed to the grocery store before going to the house we would be staying at. I picked up a few unsweetened coconut milk yogurt to mix with protein powder, a few eggs, a pack of frozen brussels sprouts and frozen riced cauliflower, a few apples, an avocado, a small jar of pesto, and a few packs of hummus. Most of our meals were going to be eaten at the house or on the go so I wanted to have plenty of fresh and healthy options.
Once we got to the house we would be staying at, we all immediately threw on our swimsuits and went outside to relax.
We spent most of Wednesday hanging by the pool, chatting, and I caught up on some homework. For dinner I had riced sweet potatoes and cauliflower with pesto, brussels sprouts, hummus, and carrots alongside some popcorn rice cake minis. I am so thankful we had a restful Wednesday because Thursday was CRAZINESS. In the best kind of way.
I woke up early on Thursday to sneak in a run before getting ready for the day. How great is that view? Although the weather was wonderful, I missed the chilly Fall temps back in Kentucky.
After breakfast I spent some time working on homework and blog things before getting ready to go the convention center for the Juice Plus+ LIVE kickoff.

After a few seminars it was time for our party on the yacht!! This night was SOO fun because we ate good food and literally danced the night away! Nothing like some old school Fergie and Gwen Stefani to really get ya moving! I was completely sweaty and disgusting by the end of the night and I was more than ready to get back to our house, shower, and sleep.
Friday morning I woke up super early, brewed some coffee, and snuggled back into bed while writing a blog post. I was definitely craving my long walks with Owen that morning!
After breakfast and getting ready for the day we headed to the convention center for another jam-packed day. I LOVED this day because I got to hear some of the most inspirational women (and men!) speak about how Juice Plus+ has changed their lives and their families lives. I also got to hear Lacey Daunt speak and you guys…I was crying before she even spoke! She is one of the women I look up to most in this business because I can relate to her so well. She is INCREDIBLE.
We took a short break for lunch where I devoured a salmon caesar salad because it was so HOT outside and I was starving. Thanks for lunch, Holly! <3
After a long day filled with tears (from listening to these amazing people!) it was time to head back to our house for our final dinner together. I was in charge of the menu and I was more than OK with that. I made brussels + apple + bacon salad, honey lime salmon, cinnamon roasted sweet potatoes, and a few pieces of lime chicken for those who didn’t like salmon.
This meal was BOMB. Do people still say “bomb”? Regardless, this meal was so stinking good.
We spent dinner going around the table saying what we were grateful for and I loved getting to know these women a little bit better. Last March I asked God to put people in my life who would encourage, inspire, and motivate me daily and boy did He follow through! I have never been surrounded by more incredible people.
Saturday morning we were all up bright and early for coffee and the last of the conference at the convention center. I will miss getting to hang out all day with these people. <3
We had to catch out plan around 2 so we headed to the airport around 1. We had a short flight to Atlanta, a three-hour layover, and then a short flight to Nashville. I couldn’t WAIT to see my pup. When I finally got home I just laid on the kitchen floor at my parents house and let him lick me all over my face. You better believe we snuggled all night.
Sunday morning I was up bright and early to sip on some coffee and get to church to teach my Sunday school class. Back to reality!
After church I did a few errands with my mom and then I went back to my parents house to hang out with my siblings and sip on more coffee. You can never have too much right? Right!
I had a meeting on campus that night so I went home around 5 after chili to unpack, clean up a little, and make my way over to the meeting. By the time the meeting ended it was 9:00 and I couldn’t wait to just fall asleep.
Monday morning I was up and ready to get the day started! I did a long walk with Owen and then got ready for a day at three different jobs. My first job ended around 11 so I raced back home to scarf down a smoothie before my next job at 12. Then at 3 I left my second job to pick up the kids I nanny from school. I finally got back home around 6:45, ate some yogurt for dinner, played with Owen, and then headed to the gym with my roommate to walk on the treadmill and read. Once again, I was more than ready to go to sleep that night!
Tuesday morning was cold and perfect! I made some coffee and took Owen for a long walk around my neighborhood. Once we got back home I showered and got ready for the day. I went to work, class, and spent some time cooking for the family I make meals for, and then took Owen for a second long walk. The night ended with Chipotle with my roommate and a conference call with my sweetest friends Holly and Tanner to talk business. <3
