Happy Wednesday! It’s 6:47 a.m. and I am finally writing this week’s recap. I have quite a bit of homework to catch up on and yet, here I am. Clearly homework is not my number one priority. 🙂
Shhhh, don’t tell my mom!
Anyways, lettuce back up to last Wednesday. I was up bright and early at 4:45 a.m. to head over to the little girl’s house I nanny. Her parent’s were going out-of-town that day and needed me to wake her up and get her ready for school. Her family keep’s a jumbo size jar of Nutella in their pantry so I feel like I need to partake in some each time I watch her. lol
Breakfast: Nutella on sprouted bread with lots of berries! Nothing better. <3
After dropping her off at school I had to go to work all day. I picked her back up around 3 and we headed to Chick fil la so she could play for a while before her parents picked her up. I went home to take Owen on a long dog walk and enjoy this concoction of food I stole from my parent’s house. It tasted like beef, mushrooms, cauliflower rice, and spinach in cream of mushroom. Whatever it was, it was amazing! Also, the last of the gluten-free cornbread in my freezer was eaten!
Funny thing, my sweetest friend Mary gifted me a box of gluten-free cornbread on Sunday. It’s like she knew I was out! The best type of friends gift you cornbread, I’m convinced. Thank you Mary!! <3
I woke up early again on Thursday to sneak in a quick run around my neighborhood before diving into this smoothie bowl.
I also got to walk to work in the rain…. cool. 🙂
I spent all Thursday at work and doing homework. I decided to stay at my parents house Thursday evening.
I woke up Friday morning and did 3 miles in their neighborhood. It was PERFECT running weather.
After showering off and getting ready for the day, I made a quick breakfast before work. 1 egg+ 2 egg whites, turkey bacon, and a GF waffle with maple syrup. <3
After working at my first job I raced home for lunch to eat the last of the veggie and turkey sausage casserole I had made on Sunday. Super filling and super good! After lunch I quickly biked over to my next job.
I spent Friday night at my parent’s keeping an eye on their dog and made myself dinner while watching The Office. Crazy Friday night over here! I had 1/2 a can of Amy’s vegan chili over steamed carrots, a slice of toasted bread with turkey slices, and grapes. I also ate some cashew milk ice cream!
I fell asleep pretty early since I had to be up early to work the International Festival with my church. I woke up around 5:30 to let Owen out and make some coffee. I had a pumpkin spiced date once the coffee was done while working on blog things. Around 7 I had a piece of PB toast and 1 egg + 2 egg whites with some parmesan cheese.
After breakfast I went to pick up my sister so she could work the event with me. <3
After out shift ended we headed to Panera to grab lunch. I had the modern greek salad with chicken added on – soooo good!
Later in the day I made PUMPKIN PIE PROTEIN FREEZER FUDGE for the blog!!!!! Tastes like little pieces of pumpkin pie!!! <3
The rest of Saturday was spent watching The Vampire Diaries with my sister!
Sunday morning I was up bright and early to teach Sunday school.
No makeup and sleepy eyes…. hahaha
After church I came home to work on homework and sneak in 3 miles on the treadmill. After my workout I made a PUMPKIN PIE smoothie bowl. No shortage of pumpkin over here!
The rest of Sunday was spent catching up at one job before heading back to my parents house to make Pumpkin Turkey Chili (haha, yes…more pumpkin!) and GF cornbread for my parents when they returned from their trip.
I finally went back to my house and went to sleep at 8:30! I woke up early one Monday and made a delicious smoothie bowl before biking to work.
Between my two jobs I had a bowl of Pumpkin Chili for lunch!
After working two jobs and going to the grocery store, I was more than ready to park myself on the couch with a big chicken caesar salad while watching The Office. And that’s exactly what I did!
I also had several handfuls of my FAVORITE Fall treat. CANDY CORN and PEANUTS! I am obsessed with this stuff. It’s really the only candy I enjoy (besides M&Ms in my popcorn!) I used to feel guilty for eating this stuff – but boy, have times changed.
I think it is so important to honor your body and allow yourself to enjoy these little things in life. Did you know that stressing about eating something is actually worse than just eating it because it raises your cortisol? Candy corn is only in season once a year so for the month of October I will be enjoying all the handfuls of heavenliness that I want with ZERO guilt and I think you should do the same. 🙂
I went to bed around 10 and woke up around 5:30 to fit in 3 miles with Owen! I love running while the sun is coming up and the rest of the world is asleep.
I came back home to cook for the family I make meals for and then made myself a breakfast of yogurt + pumpkin granola, 1 egg + 2 egg whites, and a Hilary’s breakfast “sausage”.
