Happy Wednesday! and… HAPPY BIRTHDAY TO MY BABY-NOT-SO-BABY-ANYMORE little brother. Noah, you are a handsome dude and I am so proud of who you are. Love you forever!
I am back with another weekly recap. I hope you all have had a wonderful week so far. I have been staying busy with work before school starts up again next week.
Lettuce take it back to where we left off!

I spent most of the day at work and managed to run home around lunch time to heat up this heavenliness! I cooked a little extra food for the week with the recipes I make for the family I cook for on Sunday’s and I am so glad I did because it was a huge time saver for me. This meal was roasted sweet potatoes topped with a pepper/ground turkey mixture with salsa and plantain chips added.
I came home and immediately laced up my shoes for a long walk with Owen. These evening walks have been SO WONDERFUL. I don’t work a very stressful job, but just getting outside for an hour with my pup is a huge stress reliever. I love having that hour to either listen to a podcast or listen to nothing and just NOT stare at a screen.
I was a sweaty mess when we got back so I made a smoothie bowl for dinner. I use a similar recipe each time so you can find the recipe on several of my last Weekly Recaps or my Instagram. 🙂
I went to bed around 9:30 and woke up pretty early the next morning. I started my day, like I start every day – with over 30 fruits and vegetables.
I had quite a bit of work to get done for my internship so I made my coffee and cacao oatmeal and got to work.
A few hours later I needed a change of scenery, plus I was going to meet my sweetest friend Holly, so I headed to Spencer’s coffee. I enjoyed a nice decaf almond milk latte. <3
I headed into work around noon and stayed until around 5:15 because I had a meeting at church to get to around 5:30. Once the meeting was over, it was almost 8 and I was HUNGRY. I diced a sweet potato, peppers, zucchini, and red onion and put that in a pan with olive oil. I like to add a little water throughout so the sweet potatoes “steam” a little bit and cook faster. I topped everything with a kale veggie burger, salsa, avocado, and sauerkraut.
The next morning I was up bright and early for a dog walk with Owen. When I got back I made a DELICIOUS green smoothie. I have been adding a few tablespoons of Juice Plus+ Complete and it is a game changer. It makes anything taste like a milkshake.
I went to work for a little while, then around noon I headed to Spencer’s to meet my friend Mandy and her sweet little boy Kona for lunch. Then we headed to the park so Kona could run around. I even picked up Owen so he could enjoy the park as well.
After I said goodbye to Mandy I headed to an event my other friend Sarah was putting on with Beautycounter and Fitness Collective. I purchased a cute pair of winter leggings and headed home.
Once I was home I decided to head out for another dog walk because what else does one do on a Friday night? It was such a pretty evening and it was fun seeing people moving back in on campus.
3 miles later I decided to do 20 minutes of yoga followed by some deep stretches.
I know this doesn’t seem like a big deal…but I have NEVER been able to touch my toes. Like, ever. After just a month of yoga and stretching I can FINALLY touch my toes. A true miracle, I tell ya.
Dinner was chickpea pasta with pesto and spinach/tomato/onion/zucchini stirred in. I cooked the vegetables in olive oil on the stove with Italian seasoning while the pasta was cooking. Then I mixed everything together!
Followed by chamomile tea and a SOS-free brownie! I used this recipe: click HERE and it was INCREDIBLE. If you don’t like overly sweet things, you will love these.
I went to bed around 10 after reading for a while.
I woke up Saturday morning extremely happy to have no set plans on my schedule. I spent the day doing laundry, working on my blog, working on my internship, meeting my mom and sister at the mall, and watching Friends.
I also made an incredible Avocado Salad Sandwich which you can find the recipe for HERE.
Around 5 Owen and I headed out for an extra long dog walk. I got back around 6:30 and made a super simple dinner. Sweet potatoes, veggie burger, kimchi, carrots, hummus, and rice cakes. Sometimes simple is best! I ended the night with another brownie and headed to bed reading around 10:30.
I struggled to wake up Sunday morning but managed to make it to church! I had a quick Sunday School teacher meeting after church and then headed to the grocery store. I spent the rest of the afternoon cooking for the family I cook for, taking Owen on a walk, and watching Friends.
Dinner was random things…
How many dogs is too many dogs? Yes, they all live here! My roommate has 3 dogs and then you already know Owen. 🙂
Monday I worked all day and I was in a weird mood. I don’t remember much of anything except I ate these homemade baked beans for dinner.
Also, how stinkin cute?!?!?!
Tuesday morning I was up bright and early for some yoga followed by a green smoothie!!
I also helped my sister move into her dorm room…**CUE ALL THE TEARS**
I grabbed a kombucha at my house quickly before heading to clean the home of the family I cook for.
I finished around 1:30 and I picked up my sister around 2. I snapped some pictures of a product sent to me and then Danica and I ate the leftovers for a late lunch.
We had such a fun sister day just watching the Kardashians and laughing a lot. I am so glad she is starting this new chapter in her life!
For a late dinner I had apples, carrots, rice cakes, and some chicken that had been marinating in the fridge before hopping on a conference call.
