I am so glad it is Wednesday and the week is halfway over with! It has been an incredibly exhausting week and I am looking forward to just RESTING.
But anyways…lettuce go back to last Wednesday! Sweet little Owen man got to move in with me! Of course I picked up a brand new toy and bed to get him all settled in. <3

After work on Thursday I had some time before my dinner plans to create my intentions for the month of August.

I am feeling good about these intentions this month! I usually just sit and let idea come to me and they always happen to be things I want to improve on. These are just some of the things weighing heavy on my heart and mind this month!

I went to bed around 10 and woke up early Friday morning to take Owen on a dog walk and get ready for work. I had one of my green smoothies on the way to work! I have these smoothie recipes posted in weekly recaps in the past and all over my Instagram feed!
Friday I enjoyed an easy salad that was similar to Thursdays.
The rest of Friday was spent playing Monopoly and eating pizza with my family. I had made a cauliflower pizza crust to enjoy along with everyone else. We had such a fun family game night. Usually things go south and a fight breaks out between us but everyone remained civil on Friday – thank goodness!
I went to bed pretty late but Owen woke me up at 6 am so we could get our dog walk in. I am really loving our little routine we got going. Mornings have been spent doing a 3-mile dog walk followed by yoga and my body is LOVING it. Fun fact: I have NEVER been able to touch my toes…like I could barely touch my knee caps. After 3 weeks of yoga, I CAN TOUCH MY TOES. A true miracle I tell ya.
After our dog walk I made a smoothie to go and headed to Hope House to help unload a truckload of groceries for them. When I got home around 9:30, I went into ultra cleaning mode and scrubbed down most of the house.
I finally took a shower and settled in to work on some internship work.
I was running low on groceries so for lunch I made a batch of hummus to have with the rest of the vegetables in the fridge. You can find the recipe here: CLICK HERE
A little later in the afternoon I made apple “nachos” with sliced apples, almond butter, sugar-free homemade granola, and cinnamon. Super tasty!
Around 5 I heated up leftover cauliflower crust pizza and watched an episode of Friends. Then Owen and I headed out for another 3-mile dog walk.
6 miles complete for the day I think I successfully made him tired! He has been an energy ball 24/7 lately!
I snuggled up on the couch with a Turmeric Hot Cacao and relaxed.
1 C almond milk, 1 tsp Gaia Herbs Golden Milk, 1 T raw cacao, 1 T coconut cream, cinnamon – heat on the stove. Sip and savor!
I was in bed by 8:00 and it was wonderful!
Sunday I was up at 6 to work on internship work. I had a bowl of sugar-free granola, coconut probiotic yogurt, strawberries, almond butter, and coconut cream. ACTUAL HEAVEN!!! <3
After church, I went grocery shopping for the family I cook for and headed to my parents to make everything. I also sipped on a smoothie in the sunshine for a little while.
One thing I made was this black bean mango quinoa salad and I have to make this for myself now because it was SO GOOD!

Once everything was cooked  I headed back home to take Owen on a quick walk.
We went to bed early again since I had to be up early on Monday.
I had to be at work earlier than usual on Monday so I enjoyed these chocolate, almond butter overnight oats.
1/2 C oats, 1 C almond milk, 1 tsp maple syrup, 1 tsp cinnamon, 1/2 banana – heat on the stove. Once oats have absorbed the liquid, stir in 1 T cacao powder, pour in jar, top with almond butter and coconut cream and place in the fridge overnight.
After working a while I headed to my parents house to pick up a few things and made this smoothie to-go to take for lunch: 1 C frozen pineapple, orange, papaya blend, 1 C baby carrots, 1/2 frozen riced cauliflower, 1/2 C coconut milk, 1 C water, 1 tsp cinnamon, and 1 tsp ginger – blend it all up!
After an incredibly long, exhausting, unfortunate day – I came home to take this guy on a 3-mile dog walk while I listened to a podcast to help me de-stress from the day.
I felt soooo much better after walking Owen. I made a big salad with a kale black bean burger, sweet potatoes, avocado, tomato, onions, apples, and a sesame dressing. Soooo tasty! and filling!
I spent the rest of the evening watching Friends with my roommate and then taking the time to write down things I am grateful for. It was just one of those days where I needed to remind myself of the things in my life I am blessed with. Not everyday will be a bad day.
Tuesday morning I woke up, took Owen on a long dog walk and made a smoothie to go before heading to my parents house. I did some cleaning, babysat, and then headed into work around noon.
For lunch I had a BIG salad with this fancy Safe Catch tuna. Sweet potatoes make the best salad ingredients!
After work I came home, took a nice cold shower, and settled in to write this blog post, work on my internship work, and relax. For dinner I made this 8-minute meal. Banza chickpea pasta, pesto, and arugula! An easy meal that takes less than 10 minutes? Anyone could make this!

Owen is so lucky to get 3 mile walks every day! My poor pup has had to go quite a few days without long walks because it’s been so oppressively hot here in New Jersey. All of your salads look delicious! Definitely having some serious salad envy right now. Have a great week!
I get that! The humidity is terrible in Kentucky. I have to walk Owen in the early morning or else it is just too miserable.
