Good morning and Happy Thursday! As I mentioned in my weekly recap (which you can read HERE) I officially finished my summer class so I am back on a normal schedule with a little free time to blog about my favorite things. Which mean…my lunchbox segment is back!
I have been eating the following on repeat ALL WEEK I love everything about this lunch so much! In the Orthodox Church we are currently fasting from all meat and dairy products so you won’t be finding any of those items on my blog for the next few weeks. (And if they do show up in my photos…well, I’m only human and God forgives. Right? Right!)
Strawberry Summer Salad:
- 2 C spring mix
- 5 strawberries, sliced
- 1/4 cucumber, sliced
- 5 cherry tomatoes, sliced
- 1/4 red onion, diced
- 1/4 gala apple, diced
- 2 T favorite dressing (I have been using the Panera Bread Asian Sesame on repeat lately!)
I also had:
- Celery & Carrot Sticks
- 1/2 C plantain chips (Make sure you are looking at the ingredients! Try to stay away from any plantain chips cooked in weird oils like canola or any other added ingredients like sugar.)
- 1/4 C HOPE Foods Black Garlic hummus – this stuff is addicting! So creamy and flavorful
- Baby Green Apple Suja Kombucha
