Good Morning! How are you? I am officially finished with my class and I am really looking forward to just working and relaxing before school starts up again in the next few weeks.
I left things off last Tuesday with a salad I had thrown together. Well, Wednesday I had the exact same thing! I used an almost-empty arugula salad mix and threw tomatoes, cucumber, Alaskan salmon, avocado, and croutons over top for an easy lunch.
Thursday morning began with a 3 mile run around my neighborhood followed by my favorite green smoothie.
I quickly finished some homework and got ready to go have coffee with one of the sweetest humans I know, Holly.
After spending nearly 2 hours talking about life and all things health, I ordered a quick salad to go and headed to work. I worked for a few hours and then went over to my parents house to help clean up for a going-away party we were hosting for an employee.
I enjoyed leftover salad to keep me satisfied since I knew BBQ was on the menu. I still ate a little BBQ and shredded chicken once the party started though.
Friday morning I went on a quick walk, finished up more homework, and headed into work. After working a while I headed over to Wal-Mart to pick up this HOPE hummus after seeing my beautiful friend Sarah. I used to hate Wal-Mart but they are really stepping up their game!
I also picked up a few kombucha’s and these Kevita probiotic drinks!
I headed home after work and enjoyed a snack plate of hummus, carrots, and gluten-free vegetable crackers.

I was also super excited because my Juice Plus order came in! I cannot wait to report back to you all on how they transform my health.

After working for a few hours on one last assignment for my online class, I made some kitchari to put on the stove.

I enjoyed a HUGE bowl while working.

I ended the night with popcorn and M&M’s while watching Mama Mia 2 with Shelby at the movie theatre. I didn’t enjoy it as much as the first one. I am not a Cher fan at all and I thought the music wasn’t as good.
I was up early Saturday morning to finish the last of my project and turn it in. I was SO HAPPY to be done!

I also started taking my Juice Plus pills!

After getting ready I headed over to my parents house. I needed to make a meal to bring over to my cousin’s house because she just had a little baby boy a few weeks ago. I also snuggled up to Owen for a while.

For lunch I had 2 frozen bananas, 2 T cocoa powder, and 2 T powdered peanuts blended with coconut milk and topped with Cheerios. This was so refreshing in the hot humidity!

I spent the rest of Saturday taking a nap and working on a project for my internship.
I struggled to wake up Sunday but I managed to make my way to church! After church my family and I met at Starbucks for coffee before I ran some errands. I sipped on one of these baby Suja kombuchas while grocery shopping.

Sunday evening I made a huge dinner using all the produce I got at the grocery store. This really hit the spot!

Monday morning I woke up and headed to the gym for a workout. I came home and started getting ready when I realized I had an almost-empty almond butter jar. THE BEST! I made a batch of oatmeal, poured it into the jar and stuck it in the fridge until it was time to head to work.
Creamy Coconut Apple Oats: 1/2 C oats, 1 C almond milk, 1/2 pink lady apple, cinnamon, drizzle maple syrup – heat on stove top until liquid is absorbed. Pour into almond butter jar, stick in the fridge for 1 hour (or more!) and when you are ready top with coconut cream, strawberries, and 1 T granola.

After working all day I went over to my parents house to hang out with Owen. I love this kid so much! I am trying so hard to teach him how to hug on command after seeing my friend Sarah’s dog Scout do it.


We clearly have work to do…. his face says “WHYYYY MOMMMM!?!” Haha!

I spent the rest of Monday evening hanging out with handsome friend. I hadn’t seen him in a week since he was out-of-town and boy did I miss him! He made me dinner and we attempted to play the board game Life…until I spilled my entire water bottle all over the cards and money. I’m not clumsy or anything….
Tuesday morning I was up bright and early to work on blog things and make a delicious green smoothie. Did you know the more vegetables you eat, the more your body will crave them? I wake up almost every morning and CRAVE this green smoothie. The best part? It helps control sugar cravings too! Honestly. When I start my day with vegetables my body no longer wants that chocolate at 3:00 or that ice cream after dinner. Eat your veggies! 🥑🥦🥝🥒🍈🌱{4 C spinach, 3 celery stalks, 3 t spirulina, 2 T cacao powder, 1 frozen banana, 1 T almond butter, 1/4 avocado, 1 tsp cinnamon, 1 tsp ginger, almond milk, water, BLEND!}

Tuesday was also my parent’s 25 year Anniversary! They are a true example of what it means to have a loving, God-centered relationship. I look up to them so much in what I hope to have in a marriage one day. These pictures of 25 years apart too <3
We ended the night with a little dinner I made for them following a Blue Apron recipe. I love family time!

All of your food looks delicious. And I totally agree on the vegetables. I find that if I’m eating a lot of them, my hunger and my cravings for specific foods dwindle.
