Happy Friday! I thought I would share a quick recipe with you all today. I threw together this Tomato Cucumber Basil Salad on the Fourth of July and it turned out to be pretty darn good.
Honestly, it is not the most appetizing in appearance but the flavors blend together so well to create a fresh and healthy dish. This salad would be perfect to take to any BBQ, Cookout, Pool Party, or to just eat at home. The longer the flavors marinate together — the better the taste of the salad.
Tomato Basil Cucumber Salad (GF)
Serves 8 – 10 as a side dish
- 2 large cucumbers
- 1 carton cherry tomatoes
- 1 bunch fresh basil (or 4 T freeze dried basil)
- 1/2 C feta cheese
- 1 C olive oil
- 3 T balsamic vinegar
- 1 T apple cider vinegar
- 1 T garlic, minced
- 2 T Greek seasoning
- salt and pepper to taste
Dice cucumber and tomatoes into bite size pieces, finely chop basil – add ingredients to a large bowl. In a cup combine olive oil, balsamic vinegar, and apple cider vinegar, garlic, greek seasoning, salt and pepper. Stir together. Pour dressing over vegetables. Add in feta cheese. Store in the fridge a few hours before serving.
