Happy Fourth of July! I am sitting at my parent’s house, sipping coffee, and definitely refusing to go outside. It feels like 100000 degrees outside and I hate it. I wish it was Fall and Winter weather all year round.
Let’s take this recap back to last Thursday. I woke up at 4 a.m. to head to the airport to pick up my parents and sister from their trip to Washington, Oregon, and California. Basically the car ride to get them describes how tired I was: I spilled coffee all over myself before even getting on the interstate, I accidentally parked in long-term parking instead of short-term, and then I ran over a traffic cone. Cool.
Once we were all home safe and sound I had more coffee and took a little nap. I made bacon, eggs, and a bagel thin for a late lunch.
A little later in the afternoon I was still pretty sleepy so I made a matcha tea latte. I heated 1 C of cashew milk and whisked in 1 tsp of matcha, 1 tsp raw honey, and lots of cinnamon.
After being incredibly lazy the rest of Thursday I made a big salad for dinner. I marinated chicken tenders in a greek seasoning, mustard, salt and pepper, and olive oil. Then I cooked the chicken in a cast iron skillet and threw everything over lettuce with some croutons, avocado, and a lemon dressing.
Salad accompanied by lots and lots of puppy snuggles…
Friday I spent all day at work and then headed back to my parents house to start packing up my room. My entire Friday evening involved packing and eating popcorn. Crazy Friday night over here.
Saturday morning I was up bright and early to serve breakfast at the Salvation Army with my church. After breakfast I started moving my things into the new place. After all that moving I was ready for a much-needed shower! I got ready and headed out around 1 to pick up my friend to look for a dresser. I was determined to find something cheap and as much as I wanted to support local consignment stores, I reluctantly gave in to his advice to go to Goodwill. Everything at the consignment stores were $150 + and the dresser I got was only $14 at Goodwill. Score!
It’s pretty cute if I do say so myself!
After dropping off the dresser we headed back to officially begin our date! Being surprised by flowers is the key to my heart…besides being surprised by food… and by coffee. I’m not high maintenance or anything…
He made the BEST focaccia ever and then he made homemade pasta sauce and homemade pasta all while I continued to drink too much wine. It was an excellent Saturday night!
Sunday morning, however, I woke up feeling dehydrated and sleepy. I chugged lots of water and coffee and was determined to finish getting everything that needed to be moved into the new place.
After getting everything moved in, I watched Princess Diaries (classic) with my roommate and her friend while we ate Griffs.
Monday morning I woke up early and headed to the gym for a tough workout. I always love starting Mondays off with a workout!
I headed to my parents to eat their food and drink their coffee since I didn’t have any groceries at my place yet. Sourdough bread (from San Francisco !!!!) and veggies and eggs. Perfection.
I also gave Owen SO MUCH LOVE because he was getting neutered Tuesday morning.
After spending all day at work, I headed to the grocery store and picked up the most important item for the new place… a french press. I need coffee like I need air.
I spent Monday evening with my butt parked on the couch and a hot cup of dandelion and chamomile tea.
Tuesday morning I woke up early to pick up Owen to bring him to the vet.
Poor sweet baby didn’t know what was about to happen to him…
I went back to my place and made a big breakfast after dropping Owen off (and crying the whole way home). Again, I am not dramatic or anything. I also watched my friend’s daughter while she had a job interview!
After Hannah picked up her little girl, I showered and got ready for work. I made a smoothie to-go with 2 C spinach, 3 celery stalks, 1 T almond butter, 1/2 banana, 1 tsp reishi mushroom, 2 T cacao powder, 3 tsp spirulina powder, 1 hunk of ginger, lots of cinnamon, ice, and 1 C almond milk. SO GOOD!
While at work I started working on the photos for this blog post and my friend (the same one who gave me flowers) brought me some coffee! The perfect pick-me-up!
Once I got off work I went to pick up my precious babe from the vet. He has to wear the cone of shame for the next couple of days but at least he is doing just fine. Lots and lots of cuddles make him feel better (or at least they make me feel better!).
After giving Owen lots of love, I headed to a workout class with my friend Shelby and then booked it back to my house so I could shower and get ready for my date! The night ended with Basil Eggplant at Thai Thai and an Oreo Peanut Butter Cup milkshake at Cookout. I am thoroughly convinced all good dates should end eating a milkshake with a spoon together.
