Happy Thursday…evening! My latest weekly recap is 2 weeks and one full day late. Life has been crazy with so many changes and I am finally coming up for air this evening. I also just had a 4 hour nap that was glorious and much-needed. Owen is currently by my side with his blanket in his mouth begging to lay down next to me…I’m letting him. (Sorry mom he’s on the couch!)
Lettuce rewind back to last Thursday. I’ll only fill you in on the last week instead of the last two so that it won’t be so overwhelming. Last Thursday morning I woke up early to head to the house of the little girl I am nannying to get her ready for camp. After dropping her off at camp I headed home to take a quick nap before having to drive my family to the airport. They were going to be flying to Seattle and driving down the coast to San Francisco (I wasn’t jealous at all…)
On the way to the airport my sister and I enjoyed some Zest juice for a quick-lunch.
After dropping them off at the airport I immediately made my way back to Bowling Green and straight to the Starbucks drive-thru for iced coffee’s for my friend Hannah and I. I brought them over to her new house to help her unpack and get ready for her family coming into town.
After spending a few hours at her house and the grocery store, I finally made my way home. For a quick dinner I had romaine lettuce, rotisserie chicken, lemon dressing, avocado, and croutons. I spent the night binge watching Vanderpump Rules and reading a good book.
Friday morning I woke up, took Owen for a walk, and made a green smoothie to take to work with me. I ended up getting off work around 1 so I headed home for some much-needed rest.
I spent Friday afternoon cleaning, watching more Vanderpump Rules and reading, eating eggs and vegetables for dinner, and falling asleep while eating popcorn and M&Ms. I really know how to party when my family is out-of-town.
Saturday morning I had the whole morning off from the Farmer’s Market so Owen and I met up with Shelby and her pup Wellington for a walk in the park. (Yes, I am THAT pale).
Lots of walking and girl talk later, Owen and I made our way home to cook up breakfast. I had a bagel thin with cherry jam, eggs with chicken and vegetables, and lots of coffee.
I cleaned up, spent a few hours reading, and then got ready to head to a baby shower for a sweet lady at my church. The baby shower was so beautiful and there was TONS of wonderful Mediterranean inspired food.
I came home from the baby shower to take a nap, watch more Vanderpump Rules and make a quick turkey + cabbage dinner. You can find that easy recipe HERE.
Sunday morning I woke up, made some coffee, and spent some time in my devotional.
I also made some quick banana pancakes. 2 eggs, 1 banana, 1 T coconut flour, 1 T cashew milk, lots of cinnamon, and blueberries! Mash the banana and egg together, add in coconut flour, milk, and cinnamon. Cook on a skillet and add in blueberries while the pancakes cook.
After breakfast I took Owen for a nice, long dog walk before church and running a few errands.
After our errands, we met up with Shelby, her boyfriend Logan, and their pup Wellington for another walk.
For dinner that night I had a bowl of watermelon and more turkey+cabbage.
Monday morning I woke up, went to work for a few hours, went to my nannying job, and then managed to squeeze in a run on the treadmill. I had a late dinner of eggs, and sausage.

For lunch on Tuesday I had a Panera Chicken Caesar salad. I also asked for a side of baguette and they gave me a whole loaf…I wasn’t going to complain though!
I ran home real quick to let the dogs out around 3 before my nannying job and made a delicious snack for the car ride. Banana chips, Living Raw dark chocolate, walnuts, and a cashew/cranberry energy ball.
Once I got home from babysitting, I made a quick dinner of eggs and watermelon and read a book while I waited for my friend to get off work. When he came over we dove into vanilla ice cream and his mom’s homemade apple pie. It was the best way to end my Tuesday!
Wednesday morning I woke up, went to get my hair done by Shelby, and made my way over to the gym for a quick arm circuit. After the gym I headed home to let the dogs out and make a green smoothie. I headed into work for a few hours, picked up the little girl I watch from camp and brought her home, and then I met Shelby for some shopping at TJ Maxx. I left with 2 dog toys and 3 things of gummy bears…
For dinner that night I made a quick salad with romaine, tuna, carrots, croutons, and lemon dressing plus a side of apples and cinnamon.

I tried to go to bed early Wednesday night since I had to wake up early to drive back to the Nashville airport but of course, when I need to fall asleep I never can. Hence, why I took a 4 hour nap today.
