I don’t know about you, but I could eat sweet potatoes just about everyday of my life. They are so versatile and packed with nutrients.
You know what else I could eat everyday? Guacamole.
So the other night for dinner I thought, why not combine some of my favorite things to eat?
This combo makes the perfect addition to any type of dinner whether you are having chicken, steak, or a black bean burger. OR you could eat this as a snack all week like I did!
Sweet Potato Fries (Serves 4)
- 2 large sweet potatoes
- 2 T avocado oil (olive oil, ghee, coconut oil work well too!)
- salt
- pepper
- paprika
Heat the over to 425 degrees. Wash and scrub sweet potatoes. Cut into “fries” and keep the skin on (that’s where a lot of the nutrients are!). In a large bowl, coat fries with oil, salt, pepper, and paprika — add enough spice to your liking. Bake for 25-35 minutes depending on how thick you cut your fries.
Guacamole (Serves 4)
- 3 large avocados
- 1/2 red onion, diced
- 2 T minced garlic
- 10 cherry tomatoes, diced
- juice of 1 – 2 limes (depending on your preference)
- cilantro
- salt to taste
Cut avocados in half and scoop out the insides into a large bowl. Mash avocados until creamy. Add in onion, garlic, tomatoes. Stir. Add in juice of limes. Stir. Add in cilantro (enough to your liking). Stir. Add enough salt to taste.
Serve side by side like they’re BFF’s okay? Because they kind of are. This combo = BOMB.
