Let me just first start off by saying…
holy. shit.
These lemon bar balls are INSANE. If you like lemon, these will not disappoint! They are packed with a powerful lemony flavor but also have a slight “cookie” taste thanks to the cashews!
I got the idea from the Lemon Bomb Balls at Zest! Juice. I had a craving for them the other day, but sadly I was way to lazy drive there and buy some. Instead, I decided to concoct my own little recipe. They turned out pretty darn good if I do say so myself!
MAKE THESE. That is all.
Lemon Bar Bites (Makes 16 large or 30 small)
Ingredients:
Lemon Balls:
-1 1/2 C cashews, roasted & salted
-1 C quick oats
-1 T golden milk mix (or 1 tsp turmeric) I used Gaia Herbs!
-2 T coconut flour
-1/3 C maple syrup
-1 T chia seeds
-juice of 1/2 a lemon
Icing (optional):
-1/2 C Swerve powdered sugar
-1 T milk (I used cashew)
Directions
Combine cashews and oats in a food processor and pulse until fine & crumbly. Add in maple syrup, chia seeds, golden milk mix, coconut flour, and lemon juice. Blend until dough forms. Roll into 16 large tablespoons or 30ish small tablespoons. Freeze on a cookie sheet for 30 minutes. Mix together powdered sugar and milk until icing forms. Remove cookies from freezer and drizzle with icing. Place back in freezer for 30 minutes.
Store in freezer or refrigerator!
