Yayyyy its Wednesday! The week is halfway through and I honestly can’t believe it. There is only 4 more weeks of school left…and then summer classes begin. Oh the joys of changing your major 984 times and trying to graduate ASAP.
I don’t really remember the order of these photos or what I did each day so I am just going to wing it. I feel like I have been staying super busy lately and that has been such a blessing. Ever since my breakup, it’s important for me to stay busy with school, work, my internship, and friends. God works in mysterious ways…and I wouldn’t have it any other way!
Some time last week Owen and I went on a long walk and then through the ball around in the backyard before the crazy storms rolled in.
At one point last week I got my nails done! I almost went with a light pink but changed to a bright yellow last-minute. I never thought about picking yellow since it is so bright and funky but I like it!
The next morning included a tough workout followed by coffee! Best way to start the day in my opinion.
I got ready for workout and chowed down on some of my favorite little chocolate cranberry energy bites from Zest. I love how filling these are. Such a great breakfast on the go if you eat all 4 bites or it makes a great snack if you just eat one or two.
Also…I’ve been diffusing (practically bathing) in Stress Away lately. Makes life a lot less stressful plus it smells delightful. I am a big fan of vanilla and this yummy blend has hints of vanilla and lime.
Wednesday morning I met my sweetest friend Hannah from Kerrageously Made for coffee at Spencer’s where I also had a parfait because I can’t go there and not get one now. We also passed by Zest since we would normally have been working but it was closed for the week.
The rest of the day was spent at work followed by a CRAZY amount of homework.
Thursday’s breakfast involved 1 egg + 3 egg whites and a PB slathered GF bagel thin. I ate this quick before meeting Hannah at Target to put together items for our giveaway.
I think our giveaway items were so cute! We picked out some of our favorite products to give away to one lucky winner!
After taking the photos and dropping Hannah off at class I headed to Rian’s Fatted Calf to pick up my meat order for my Sarma recipe and take pictures for the blog post I did on them.
I ran home really quick to put the meat away, let Owen out to potty, and met my other friend Hannah (lol) for lunch and coffee!
We ate at Pub by Novo where I had the salmon salad and then we headed to Spencer’s for lattes. I love this girl! I am always laughing when I am with her!!
Thursday was the reading of the 12 Passion Gospels at Church from 6-9 p.m. I inhaled some avocado/tuna sourdough toast before since I knew it was going to be a late night. I came home incredibly exhausted!
Friday morning started with a workout followed by OATMEAL. Peanut butter chocolate oatmeal to be exact. When I have a craving for oatmeal, I immediately cave in and cook it up. I love how versatile it is. My family made so much fun of me because they said it looked like I was just eating a bowl of chili with bananas on top. Ew.
I spent most of Friday at Church since it was Royal Hours.
Later that evening, Hannah came over for wine, guacamole, and a dance party. We signed me up for the dating app Bumble just for fun and ohmygosh. Boys can be SO WEIRD. We were cracking up the whole time and had way too much fun. I deleted the app immediately after Hannah want home, haha!
Saturday morning I woke up to…SNOW. What the hell? Luckily it melted quick! I enjoyed a cup of coffee before getting ready for a Church service we were having that morning.
I was very thrilled to be wearing my snow coat in April…
After Church, we headed to Cracker Barrel for a family breakfast.
When I got home I laid on the floor with Owen for 30 minutes just cuddling and trying to pry my slipper from his teeth.
The rest of Saturday was spent cleaning and relaxing before the midnight Pascha service! Orthodox Christians follow the old calendar, so our Easter service was held this past weekend.
Christ is Risen! Truly He is Risen!

What’s Pascha without a proper basket of goodies! Lots of cheese, meat, bread, and wine.
We got home around 3 a.m. and my internal alarm woke me up at 7. I cuddled with puppies and spent the morning relaxing. No one else woke up until 11!

After finishing a project for school I chowed down on a carrot cake Larabar. HOLY CRAP. These things are amazing!
My mom and I also made the stuffed cabbage rolls for my Fatted Calf post. I edited all the pictures and finished writing the post the rest of the afternoon. Click HERE for the post.
And…I have no idea what I did Monday. I went to work and then came home to work on school work. I know that much!
Tuesday morning started with 2 miles on the treadmill followed by a bunch of random weight circuits. Afterwards I ate a GF bagel thin and an egg, veggie, bacon deconstructed omelet. I also had some major studying to do for a Microbio test later that day.
This is how I felt after finding where Owen and Annie dug up all the landscaping…
I spent the rest of the day at school and then came home to cook up chicken gyros for my family!
And then this morning started with a super sweaty spinning class followed by a big breakfast. I power cleaned the downstairs of the house, took a shower, and booked it to work.
