Happy Wednesday!
How are you? I am doing pretty well this week. My school is out for Spring break so I have been working a lot and even got to take Tuesday off to head to Nashville to spend time with Barrett. But I will get to all that!
First, lettuce back things up to where I left off last Wednesday. My sweetest sister brought my liquid gold (an almond milk latte from Spencers!) and their housemade granola bar. I ate half the granola bar and saved the other half for breakfast Saturday morning.
Dinner later that night was eggs + spinach, carrots, pretzel thins, and hummus…and ketchup. Don’t judge me.
I was EXHAUSTED Wednesday evening and was in bed by 8:30…no shame. Luckily I had the sweetest cuddle bug to snuggle up next to 😉
Thursday morning I woke up with every intention of workout out…but sometimes the desire to have coffee wins! I am loving these Nut Pods in my coffee lately. I picked up French Vanilla and Hazelnut at our local Kroger.
I also had 1 egg + 2 egg whites, a sprouted english muffins with almond butter, and mixed berries.

Lunch that day was tuna + avocado + salt & pepper, hummus, carrots, and some brown rice snaps to scoop up the tuna.

I knew my parents were exhausted after dealing with everything going on with my granddad passing away so I cooked dinner that night. Roasted broccoli, an Italian salad, and a vegetable pasta dish. Comfort food at it’s finest in our house!

Friday I only took one picture…haha at least it was coffee! Barrett comes into town on Fridays so I usually spend the morning at work and anxiously wait all day for his arrival that afternoon.

Saturday morning was a ladies retreat at our church. I woke up bright and early and drank a cup of coffee with the other half of my granola bar from Wednesday. When I got there they had homemade mixed berry muffins, so I inhaled one of those to. No shame.
The retreat was wonderful and our Priest had a great discussion on the Prayer of St. Ephrem. Read the following slowly and think about each word. This prayer is one of my ABSOLUTE favorites and is so relative to each of our lives.
O Lord and Master of my life, take from me the spirit of sloth, despair, lust of power, and idle talk.
But give rather the spirit of chastity, humility, patience, and love to Thy servant.
Yea, O Lord and King, grant me to see my own transgressions, and not to judge my brother, for blessed art Thou, unto ages of ages. Amen.
Several bouts of crying later…it was time for lunch!
We had a delicious Lenten catered meal by River Cottage Farm Catering. From what I could tell it was tofu, sticky rice, sea weed, beets, green onions, and a little soy sauce. I LOVED this. So flavorful and filling!
When I got home Barrett was up and awake and had been helping my dad with some things that needed to be fixed. (what a great future son-in-law he is 😉 ) We headed out to do several errands before church that night. We actually ran into some people Barrett knew at Barnes & Noble and ended up chatting with them for like an hour in the cookbook section all about healthy eating! I love meeting like-minded people!
We decided to have a super early dinner before church. Greek Salmon Salad for me from Pub by Novo! Can you still say you ate a salad for dinner if you just ate all the toppings? Asking for a friend.
After church, Barrett headed back to Nashville and my weekly heartbreak kicked in. (I’m not dramatic…)
Sunday morning started bright and early per usual teaching Sunday school to my favorite little ones. I booked it home after church to guzzle coffee. Danica snapped my many feelings when I drink coffee…
I also made OATMEAL! Because I love it so stinkin much. Oats, berries, almond butter, granola, and cacao nibs.
Several hours later I was hungry so I snacked on a Perfect Bar and some hot tea. I have my mom hooked on these bars now, they are so tasty! I spent the rest of the day watching Royal Pains on Netflix with my mom. Sundays don’t involve eating a lot of vegetables or exercising.
Monday was the first official day of my Spring Break and I woke up to snow? What the heck Kentucky. I normally love the cold and snow but I am craving warmer weather so I can run and walk more outside!
Before my coffee I went to the gym for 2 miles on the treadmill, 10 minutes of arm exercises, and 3 miles on the bike! I was a disgusting sweaty mess but I loved every minute of that workout! Variety is key for me. I discovered I am someone who DOEST NOT like going into the gym with a prescribed workout or has a game plan in play. I just walk in and decide what sounds good for my body in that moment! My body is so much happier for it.
Since it was so cold…I made oatmeal. It was so beautiful I had to snap a few pictures. Plus it was like dessert so I made it a blog recipe! Recipe HERE.
I headed into work that morning before I got my nails done! I have never had acrylic nails before but Rita from Polished did AMAZING! We are going to do acrylic tips until my nails grow longer. I have a really bad habit of picking my nails and cuticles so I can’t wait to see all the changes Rita helps me with.
After I got my nails done my mom and I stocked up on groceries. I made a mint chip shake for lunch! It was super healthy but tasted like a milkshake. WIN!
I went back to work for a few hours and then met my friend Abby at my house so she could record me talking about Orthodoxy for a project she is doing. I cried a lot during that to. Mom and dad, why did you make me such an emotional person? Haha
Dinner was GOOD! I sautéed mushrooms, kale, tomatoes, and zucchini noodles in olive oil and garlic. I added in pesto once the vegetable were cooked and topped it with 1/4 an avocado. I also had a sprouted GF bagel on the side because #carbs.
Tuesday morning started with a kicka** spin class followed by a protein yogurt bowl! Coconut milk yogurt, protein powder, berries, and granola. Yay sugar-overload! Haha
I went to work for a few hours and then headed to Nashville to hangout with my orangeblossombaby (my inside joke with Barrett). I stopped at Turnip Truck to pick us up some lunch when I got there. For me: roasted carrots, brussel sprouts, vegan Chana masala, and an egg! We also ate lots of sprouted hummus and Siete chips.
We spent the afternoon cleaning and doing laundry. Seriously some of my favorite things to do. It is so therapeutic to me and Barrett always needs a little help since Tuesdays are really his only day to do anything like that.
After cleaning we headed out to pick up ingredients for me to make him granola bars and we also stopped at High Garden Tea for a flight of their housemade kombucha. So tasty!
I ended up buying this kombucha from Turnip Truck though. This one is my FAVORITES and they don’t sell it at any stores in my town.
We ended the day with a walk in the beautiful weather! His brother Brian was also having a party so I stayed for a little while (mostly so I could eat the AMAZING BBQ tempeh he made haha!)
I got home late that night and headed straight to bed!
I skipped out on a workout this morning but I am looking forward to a long walk later.
