Today is a weird day for me. My grandpa passed away yesterday evening and although we all knew it would happen soon, it still feels weird to know someone was alive one second and gone the next. I can only find comfort in the fact that my Grandpa is in the hands of God now. There is nothing more I can do and there is nothing more for me to worry about.
Sorry to be so depressing on this sunny Wednesday afternoon but I like being honest on my blog.
Lettuce perk this blog post up a little with a recap of the past week!
Thursday I was at work for most of the day and only had to be on campus for one class. I enjoyed a simple salad of romaine, spinach, salmon, and white balsamic.
After my class I came home and changed into my slippers and made some lemon ginger tea. I also had “Peace & Calming” on my diffuser bracelet from Oil and Honeycomb. I was definitely in a peace and calming type of mood.
Friday morning breakfast consisted of a GF apple cinnamon waffle and my veggie scramble!
I went out to lunch with my mom and Friday! <3 We went to Corner Bakery and I had “The Trio” with quinoa salad, fruit, and hummus. Not pictured: a cup of coffee and the snickerdoodle cookie we split š
When I got home I was so excited because 1. my spectacles came in! and 2. Barrett was on his way from Nashville!
I spent the afternoon making Cashew Cookie Balls for the Draw Near Designs Instagram takeover. Later that evening Barrett and I headed to Indian Oven for an early dinner followed by going to see “The Music Man”. Our sweet friend from church was the lead and he was INCREDIBLE. The whole cast was amazing! I have never seen such an amazing high school production.
I ended up staying up until 1 am watching “Dark” with Barrett on Netflix. I fell asleep soon after that and Barrett stayed up until 3. I don’t understand how he works third shift.
Saturday morning still began bright and early at 6 am when the dogs woke me up. I let them outside to do their business and made a beeline for the coffee pot. I usually enjoy a cup of coffee, relax for an hour, and then make breakfast while I enjoy my second cup of coffee. Breakfast was…my veggie scramble. #cantstopwontstop
Well, I guess I could stop but why would I want to?
My parents and I took the dogs on a 2 1/2 mile walk and they ran some errands while I worked on some homework the rest of the morning. Around noon I had some veggie soup, crackers, pretzels, and grapes.
Around 2 I couldn’t take it anymore and made Barrett wake up and run errands with me! Haha! Look at sweet little Owen…

Around 4 I headed to take some pictures for an upcoming adventure with my friend and mentor Natalie!
The rest of Saturday night involved church with Barrett, a big salad for dinner, and Netflix with Danica.
Sunday morning I woke up super early to head out on a run/walk with my mom. We covered 4.77 miles! I remember when we would run 9+ miles every weekend. It is crazy to me how quickly our bodies can change and adapt to different routines.
When we got back I put the Black Bean chili in the slow cooker and filmed it for the Instagram takeover. After that I got ready to head to church to teach Sunday school!
When I got home I made PB&Strawberry oatmeal for the IG takeover. You can find the recipe on Draw Near Designs IG page!
Most of the afternoon was spent relaxing and enjoying the sunshine. My mom and I even went on another walk it was so beautiful out.
I was so excited for dinner that evening because the Black Bean Butternut Squash Chili had been cooking all day! I topped mine with some organic corn chips.
What a wonderful weekend it was! I am already looking forward to this weekend so I can see Barrett again! <3
Monday morning started bright and early at 5 am! I headed to the gym for a tough spin class. I have been loving spinning lately. It makes me drenched in sweat and it is really therapeutic for me to pedal as fast as I can. Is that weird? It is my favorite workout lately. I love mixing up my workouts and just listening to my body. Lately my body craves spinning, runs, and walks!
When I got home I downed some coffee and made a 1/2 portion of a protein shake. I used 1 C cashew milk and a 1/2 packet of Advocare Trim Chocolate Coconut protein. I also had 1 egg + 2 egg whites.
I spent all Monday at work and was mentally exhausted when I got home. I went to bed early and was happy to finally get some sleep.
Tuesday I woke up at 6 am to head out on a run. The weather could not have been any more perfect. I went 3 miles and did some deep stretching when I got home.
I also made a DELICIOUS breakfast for my dad and I love making other people happy by making them food <3
Oats, almond butter, trail mix, blueberries, and strawberries!
Lunch at work was a bunch of random things (sometimes that is the best!!). I had some Almond Nut-Thins, carrots, grapes, and hummus!
I had an afternoon class and then met with a lady from church who also happens to be in charge of the Study Abroad program at school. We talked about grad programs abroad… š That is all I will say for now! …I am thinking the Netherlands…
After my meeting I headed to the grocery store to pick up some dinner ingredients. When I got home…that is when I got the news about my grandpa. It is hard me not to cry thinking about him. I am praying he is in a better place.
Dinner was not pretty but everyone in my family raved about it! (Yes, I am tooting my own horn on this one!) Teriyaki salmon, roasted potatoes, brussel sprouts, carrots, and tomatoes. SO GOOD! The rest of the evening was spent snuggled up with my parents and sister watching Netflix. Yes, I am 22 and still snuggle up with my parents. Sorry not sorry.
This morning (Wednesday) began with another spin class! This time I went with a shorter class so I could do some ab and arm work after.
Breakfast was 1 egg + 2 egg whites and PB&Chocolate Cheerios. I think I will forever love Cheerios. I went so long telling myself I “couldn’t” eat cereal. Now, I love having Cheerios every now and then! Don’t deprive yourself!
I am off to do some homework and just kind of be with my thoughts right now. Thank you to everyone who has so kindly reached out to my family and I during this time. Death is never easy but God makes it easier and so does kindness.
