Happy Valentine’s Day! I hope you take time to be with the people closest to you and do something for YOURSELF. It’s important to love ourselves too ya know!
To show my self some love this morning I started out the day with a run followed by PANCAKES.
Sadly, I will not get to spend today with Barrett but I am looking forward to seeing him this weekend. We already have a couple of fun things planned!
So about these pancakes…they are literally so easy and come together in a matter of minutes. I almost didn’t post this recipe because it is so easy and then I remembered…I LOVE posting easy recipes that anyone can make. And moms, I think kids would really love these!!
- 1 brownish banana
- 2 eggs
- 1 T coconut flour
Mash banana. Whisk in 2 eggs. Stir in coconut flour. Cook like regular pancakes! I cooked mine in a little ghee!
optional add in: cinnamon, vanilla extract, cacao powder, 1 T protein powder, 1 T PB2
(I added in cinnamon and PB2!)
Top with: dark chocolate chips, blueberries, more banana, maple syrup, granola, CANDY HEARTS, or whatever else you desire.
