Good morning!
Call me crazy, but I LOVE the snow!
Right now as I am writing this post I am curled up by the fire, wrapped in my XXL fuzzy grey sweater, and there is a blizzard outside. I LOVE IT. Snow also makes the PERFECT lighting for necessary food pictures. Ya know?
Now, granted, I don’t actually have to leave my house today if I don’t want to. So I understand those who have to go to work and school might actually hate the snow. But for me, I am thanking God for the beautiful winter wonderland right outside my window.
Do you know what else goes perfect with snow? OATMEAL. I made this beautiful bowl of oatmeal to enjoy with my cup (or three cups) of coffee this morning.
I present to you PB&J Oatmeal! And this is not just your everyday PB&J…this is blueberry jam fresh from a sweet, local, Amish woman!

PB&J Oatmeal (serves 1)
- 1/2 C quick oats
- 1 t chia seeds
- dash of salt
- sprinkle of cinnamon
- 1 C almond milk
- 1 t blueberry jam (or other favorite jam)
- 1 t natural PB (I like Krema! – found at Kroger)
- 1 T cranberries
- 1 Nature’s Bakery gluten-free blueberry fig bar(found at Kroger)
Add quick oats, almond milk, chia seeds, salt, and cinnamon to a microwave safe bowl. Stir well. Microwave for 1 minute. Remove from microwave and stir again. Microwave for 1 minute and 30 seconds. Remove from microwave and stir. Top with jam, peanut butter, cranberries, and fig bar.
