Happy Monday! I hope you all enjoyed a nice and chilly weekend with the ones you love. I know I did! This weather has been PERFECT. I love dreary, cloudy, drizzly, & extra chilly days. There are few things I love more than wearing a sh*t ton of layers while holding a mug of coffee.
Things were pretty low-key over here this weekend but honestly, that’s just the way I like it.
Barrett got in to town on Friday so when I got out of class at 3 I met him at my house. He was already snuggled up on the couch watching Stranger Things 2 (with the rest of America). I never watched season 1 so I decided to just cuddle up next to him with a cup of coffee and read blogs.
For dinner that night we started out with a few glasses of wine while dipping assorted bread into olive oil. I also roasted up some mushrooms, brussels sprouts, and tomatoes in olive oil, salt, and pepper to go along side some tuna steaks.
After dinner, Barrett and I snacked on some popcorn and sipped tea while we watched an episode of Suits. I quickly passed out after that since it was like 10:30…too late for this grandma.
I woke up early Saturday morning since I had a hair appointment with my mom. I finally got my lion’s mane trimmed and thinned. I also had a gloss added in. I think next time I will go darker on the gloss to really change things up. (#rebel)
After our hair cuts, my mom and I met up with my dad at Home Cafe for brunch. I had an egg, bacon, and some roasted potatoes. After that we did a few errands and finally made our way home.
My parents had a football game to get to and Barrett was with his parents, so I parked my butt on the couch with my homework, a cup of tea & a simple salad (argula, sweet potatoes, GF chicken nuggets), and watched New Moon. (Don’t judge. I am and always will be a die-hard Twilight fan)
3 hours later…Barrett picked me up and we headed to church for Vespers. After church we went to Blaze Pizza. This my first time ever eating inside (I got takeout once and hated it) so I was excited to go back. We got 2 gluten-free pizzas to split and some iced matcha drinks. I ordered the gluten free with a butternut squash and quinoa salad on top and Barrett ordered some kind of chicken/pesto one gluten free. I had a few pieces and let Barrett finish them off. I am always impressed with the amount of food he can put away. I was also impressed with the pizzas! I’ll be back for sure!
After dinner we dropped into Kroger to pick up a few things then made our way back to my house. Once we made it back, it didn’t take long for me to drift off into sleep again. I abruptly woke up an hour later to find Barrett watching something on his phone. I said my goodbyes to him for the week and fell back asleep.
Sunday started off bright and early since I had a babysitting gig from 8:30 to 5:30. It was a very, very long day! The kids I watched were adorable and we had a lot of fun.
I wanted to show you what I packed to eat for the day!
I ate a slice of almond butter toast on the way over and then dug into my lunchbox throughout the day:
organic chicken and wild rice soup
-bag of baby kale (I like to add this to my soups for some extra veggies!)
-an apple
-plain almond flour crackers
-an RX bar
-a hunk of dark chocolate bark
I like to keep my food interesting and healthy when I babysit. I chose soup since I don’t eat it everyday and it would give me something to look forward too. I added in the hunk of dark chocolate since I knew I would need a little pick me up!
The good thing about the kids I was babysitting was that their mom is practically super woman. She keeps the placed stocked with all kinds of organic fruits, meats, vegetables, snacks, etc. I felt good about the food I was giving to the kids and I felt good about the bite of ancient grains pizza I snagged during their lunch time 😉
I got home around 6 and immediately took a shower and poured myself a glass of wine. I was exhausted! I don’t know how you mom’s do it!!!
I am sitting here typing this up now and I can barely keep my eyes open! ….its 6:45 by the way. #rebel again.
I’ve got some Microbiology studying to do so I should go do that…don’t be too jealous.
