Happy Monday to you all! I am writing this recap on Sunday night because tomorrow I have to be up early for work. I cannot believe school starts this week. I feel super underprepared. I also can’t believe the eclipse is tomorrow. Everyone I know is freaking out about it. Is it bad that I am not all the interested? I think it’s cool and all, I am just not super gung-ho about it. (Do people still say gung-ho?)
Anyways…I had a super relaxing and restful weekend in preparation for the first week of school! Let’s get right to it shall we?
Friday afternoon I picked up my mom and we headed to a new sandwich shop downtown called ROAM. The inside was super awesome and the shop is tucked away in the prettiest ally in Bowling Green.
I ordered the chicken salad on sourdough and my mom ordered the tuna salad on wheat. Both sandwiches came with a bag of organic chips. I highly recommend ROAM for a quick-lunch stop!
After eating, we walked over to Spencer’s to grab some lattes. Almond milk latte for me!

I dropped my mom back off at work and then I headed into work myself.
After I got off work, I met my mom at the park to walk the trails. I love hanging out with my mom…incase you couldn’t tell. After our walk we headed back home to veg out on the couch and watch Royal Pains on Netflix. Everyone in my family was working late Friday so it was just my mom and I!
I had leftover BBQ pork and brocoli for dinner. A little later I had some mint chip and chocolate chip ice cream to end the night.

The next morning I woke up and made my mom, dad, and I some eggs and bacon. I also had a couple cups of coffee <3

Around 10 my mom and I headed to Panera to meet up with some of the ladies in our church for a meeting. I had a unsweetned iced tea. After Panera, my mom and I went to TJ Maxx to find me a new purse. I also ran into a couple of the sweetest girls from my church. (Hi Kate, Alethia, and Sophia!!)

After TJ Maxx we headed to Jimmy Johns to pick up lunch to bring to my dad and Danica who were both at work. I had the “unwhich” with turkey, mustard, cucumber, tomato, cheese, and avocado.

After we dropped off lunch to my dad and sister, we drove around looking at houses for sale. With no luck, we headed back home to take a nap. Driving around is exhausting!
After watching a couple more episodes of Royal Pains, I got ready to have dinner with Barrett and his parents for his dad’s birthday! We went to Samurai. I had a little rice and some vegetables. I also drank about 8 glasses of water to wash out the sodium from all the soy sauce! …I was peeing the rest of the night. Hah!

After dinner, Barrett and I picked up drinks at Starbucks and drove around the back roads of Bowling Green just talking about life. (These are my favorite kind of dates with him!) He starts a new job this week so say a prayer for him!

After driving around, Barrett dropped me back off at my house and then he went to meet up with some of his friends at a bar.
I watched a couple of episodes of Hart of Dixie with Danica and then I crashed into bed.
I woke up around 8:30 on Sunday morning to get ready for church. Barrett came and picked me up which was sweet. We don’t usually ride to church together so it was a nice treat!

After church, Danica and I picked up iced coffees at Panera and did some errands. I also ate an RX Bar with my coffee. I love this flavor! It tastes like a pancake.
When we got back home a little later, I ate some more pork and broccoli with a few plantain chips.

I started typing up this blog post and Barrett came over. We headed to Kroger together to get some kombucha and ingredients to make No Bake Cookies for my mom’s work.

When we got back to my house, I made the cookies and snacked on some chips and salsa while Barrett took a nap. A couple of hours later, we watched Suits with my dad and ate pizza. I ate the vegetable Caulipower pizza and it was amazing! I enjoyed some with a glass of wine. After my pizza, I ate a No Bake Cookie just to make sure they tasted OK 😉
Just as I had finished my cookie, the power went out! So we all sat in the dark for about 45 minutes. I am finished up the rest of this post now that the power is back on. I hope you all had a wonderful weekend! I will see you here Wednesday for a “What I Ate Wednesday” post. I am hoping to post a couple of back-to-school related things soon as well!
Bye!
