Happy first Monday of the year!
Today my mom found some organic turkey on sale at Kroger so I decided to roast up some vegetables to go with it and make a meal prep post out of it!
First, my mom sautéed the turkey and seasoned it with salt and pepper so that we could add our own sauces later in the week depending on our what we were craving. I personally like BBQ sauce or Tesserae’s Ranch (found at Kroger in the produce section!) P.S. We used Simple Truth turkey at Kroger.
I than cut up some organic vegetables to roast. I used a turnip, 2 heads of broccoli, 2 sweet potatoes, and a bag of new potatoes. I sprayed the vegetables with Chosen Foods avocado oil (found at Walmart!!), and seasoned them with pink salt, curry powder and rosemary.
I roasted the on 425 for about 30-45 minutes.
While those vegetables began roasting I sliced up some acorn squash.
I seasoned them with pink salt, cinnamon, and nutmeg. I roasted these for about an hour at 425.
You could combine the turkey and vegetables with rice to make a meal or you could snack on the vegetables with some hummus throughout the week. Either way, at least you’ll have some healthy food on hand in the fridge!
Meal prepping is super easy and can be pretty fun if you put on some music and jam out.
