I recently discovered that I LOVE sauerkraut! I used to look at this stuff and be like, “ew, gross.” But now, I am hooked!
Sauerkraut is fermented cabbage and in many brands you will find spices, herbs, and fruits added to the mix. The one I used above has cabbage, pears, and cilantro. Sauerkraut is packed with vitamins A, C, K, and different B vitamins. Vitamin A helps support your body’s immune system. Vitamin C helps produce collagen. Vitamin K is essential for blood clotting and the various B vitamin helps improve mood and lower cholesterol levels.
It also contains high levels of dietary fiber (to make you poop!) With its high levels of fiber, sauerkraut can help relieve constipation and bloating. Sauerkraut has incredible probiotic benefits that also help your digestive tract. It improves your digestion, speeds metabolism, and helps restore healthy gut flora (which can be beneficial in preventing cancer!)
Here is a super simple way to enjoy sauerkraut!
Sauer Toast:
- 1-2 pieces sprouted toast (I like Ezekiel!)
- 1/2 organic avocado
- squeeze of lemon
- salt and pepper
- 1/4 cup sauerkraut (I like Wildbrine and Bubbies!)
Toast bread, spread with avocado, add squeeze of lemon, add salt and pepper, add kraut. Enjoy!
