No Bake Cookie Oatmeal

This oatmeal is the oatmeal of my dreams. To say no bake cookies are my favorite cookie would be a understatement. Since it would not be ideal to eat cookies for every meal (although I wish it would be), I decided to create a healthy oatmeal recipe that would be similar to a no bake cookie but would provide a lot more nutrients. Plus, I wouldn’t judge you if you did eat this for every meal.

This recipe is packed with antioxidants from the oats and cacao powder, soluble fiber from the oats, magnesium and iron from the cacao powder, and full of fat soluble vitamins A, D, and E from the ghee.

No Bake Cookie Oatmeal {Serves 1}

  • 1/2 cup old-fashioned oats
  • 1 cup almond milk
  • 1/2 tsp vanilla
  • pinch of salt
  • 1 tsp cinnamon
  • 1 tsp honey
  • 1 tbsp ghee (or butter)
  • 1 tbsp peanut butter
  • 1 tbsp cacao powder (or cocoa powder)

Add oats and almond milk to a pan on medium-heat. Stir occasionally. Once liquid is absorbed, add in vanilla, salt, and cinnamon. Stir vigorously. Remove from heat, add in honey, ghee, peanut butter, and cacao. Stir vigorously again. Pour into a bowl and try not to faint from how good it tastes.
