Happy, happy Monday!
I hope you all had a wonderful weekend. I know I did! I took so many pictures this weekend, so be prepared and try not to drool all over your keyboard/phone when you see all the amazing food I ate. Hah!
Lets back up to last Thursday evening…
My parents were out of town so I cooked up dinner for Danica and me. I loosely followed Paleomg’s 5 ingredient pizza spaghetti pie recipe.
This turned out so good! I packed it with a ton of kale and broccoli and it was delicious!
I had two tests on Thursday so I vowed not to do any homework and decided to eat this while watching Friday Night Lights.
Friday after work Danica and I had a sister-night planned. We started off with a Target shopping trip to pick up some fall decorations and buy other things we don’t need.
And it is officially that time of the year again…
Multiple handfuls of this combo were eaten.
Then we ate some organic margarita pizza and watched Serendipity!
We then ate mint chip coconut milk ice cream ($2 on managers special at Kroger!!) and watched 90210 until 2 in the morning…
So Saturday I slept in until 9 (!!!!!!) and woke up to Paleo pancakes, coffee, and a rainstorm. The perfect Saturday if you ask me.
For the pancakes I just combined 1 ripe banana, 2 eggs, 1 TBSP of coconut flour, and a dash of vanilla. I topped them with AB, blueberries, and maple syrup. SO SO SO GOOD! And these pancakes don’t weigh you down so it’s a double win.
My sister and I watched some more 90210, decorated the house with fall stuff, then Barrett came over and then my parents finally made it home safely!
After catching up with them for a while, Barrett and I went to hang out in town to start our date night.
First stop was smoothies…
We also had an almsgiving meeting at Church we needed to go to.
Then we went to dinner at Home cafe and went to see Sully. It was such a great movie! The movie theatre was packed so I sat next to an older married couple. They made comments the whole movie saying think like “mmmhmmm, that’s right.” It was cute but I thought I was going to go crazy hah!
I went to bed as soon as I got home, I was so tired!
Sunday I had to be at church early since Barrett and I are volunteers for the Pre-K/Kindergarten Sunday school class.
After church I came home to work on some homework, hang out with Barrett, and meal prep for the week.
I got these at Target and they are so good!
Meal prep included a ton of roasted veggies, turkey burgers (un-pictured), and 2 vegetable/sausage egg casseroles.
I love having food ready to eat throughout the week.
My dad also made us steak/chicken/shrimp/kielbasa and veggie kabobs,and rice for dinner. This meal was super, super good. Bonus points for my dad!
The night ended with some more coconut milk ice cream while working on some homework… and more 90210 with Danica.
This morning was a super tough Crossfit workout (I’m talking 75 thrusters…) followed by some of my egg casserole and a Paleo pumpkin muffin from WellnessMama.
