Where did the weekend go??
I feel like I have 902 things to do this week and its only week 2… this semester should be interesting.
Luckily my weekend was semi-productive but also included lots of down time. I love weekends.
Lets back it up to Thursday real quick because I love this picture:
SDA (Student Dietetics Association) had some volunteers pass out healthier meal options on campus and I was more than thrilled to do so!
Friday:
Friday couldn’t have come sooner. I was looking forward to finally seeing Barrett and eating some pizza with my mom and sister. My dad and brother were out-of-town all weekend so it was just us girls!
So real quick story, I went to the dermatologist a couple of weeks ago to have a mole removed. The Doctor said the mole looked fine but they would go ahead and remove it anyways. Well, Friday I got a call from the doctor’s office telling me I needed to come back in since they found a lot of inflammation and melanoma in the mole. Yay. I called Barrett right after to let him know this might be the last time he ever talks to me. (…I’m not dramatic or anything) But, he calmed me down like he always does.
Anyways, Friday night involved a Keeping Up With The Kardashians marathon while eating pizza and brookies with my mom and sister until Barrett arrived.
Once Barrett came over, we watched House of Cards until 1 in the morning. Then we stayed up talking for a couple of hours about life and school. He passed out pretty quickly but for some reason I could not fall asleep until around 4.
Saturday:
Saturday included lots of coffee, pancakes, yoga, a grocery store run, lots of homework, Friday Night Lights, and then Ambitious Kitchen’s low-carb lasagna. I swapped the eggplant for zucchini so it ended up being more like a lasagna-soup. It was still tasty though! Barrett came over again and he took me to Stakz for an impromptu date-night. I love frozen yogurt.
Sunday:Â
Sunday was pretty low-key. My mom, sister, and I went to church, ate at Wild Eggs for brunch, and then I worked on some more homework. I also decided to meal prep an egg bake and Ambitious Kitchen’s zucchini muffins to eat throughout the week!
The night ended with some left-over lasagna, a walk with my mom and sister (that turned into a run once the storms rolled in half-way through) and some Friday Night Lights before I fell asleep.
P.S. I will post the egg bake recipe tomorrow because in the words of my mom, “it was BOMB!”
I woke up at 4:45 this morning ready for Crossfit…but really just looking forward to coffee and that egg casserole bake.
Also, side note. I rode my bike to class this morning only to find out that my jeans have a huge hole in the crotch. Today should be real interesting.
