Happy Wednesday! I feel like the weeks are flying by. I think there are only 3 weeks until school officially starts again. But hey, I’m not complaining!
My day started bright and early with a 4:45 alarm clock. I quickly reset my alarm for 7 and decided Crossfit could wait until tomorrow. The workouts from Monday and Tuesday were still taking a toll on my body, so more rest was needed!
Once I woke up I made a beeline for the coffee pot and put some oatmeal on the stove while I did some quiet time.
That weird stuff in my coffee is just cinnamon, no worries.
It is now 10:56 am as I am typing this and that oatmeal is still keeping me full!
For the life of me I cannot remember what I ate for lunch yesterday, so I will show you picture of the AMAZING dinner I ate on Monday night while babysitting:
Steak from the Fatted Calf, roasted cauliflower and potatoes, and some sautéed mushrooms and onions. All dipped in hummus. My dad made this meal on Sunday night and since I didn’t get to eat it then, my mom brought me a bowl of left overs. That’s love people.
Yesterday I took a nice long nap before my last night volunteering at the Center for Courageous Kids. When I woke up I whipped up this super simple shake:
Please excuse this horrific picture, I was in a rush. This was 1 frozen banana, 1 cup almond milk, 1 spoonful of PB, 1 Tbsp Cacao powder, and 1 Tbsp espresso (although I think 1 cup of coffee would be better) This tasted just like the Frozen Goat from Planet Smoothie, does anyone remember that place? I miss it.
On my way home from CCK I called my sister and told her to tell my mom I needed food ASAP. This whole Crossfit thing has made me hungry ALL THE TIME.
So, before I headed to my house I stopped at my parents for some of their leftovers.
Turkey burger with BBQ sauce, Mac n cheese, broccoli, sweet potato fries, and an unpictured heavenly homemade roll. They were out of forks so I used my Winnie The Pooh fork from when I was 2. No shame.
If you’re thinking “wow, for being a plant based eater she sure has been eating a lot of meat!” you would be right. My body has been craving meat lately (I think with working out more) and that is OKAY. We should listen to our bodies. I usually only eat meat if I know where it came from, what’s in it, etc.
I ate a couple bites of ice cream and then headed to my house. I showered off the smell of meat sauce from CCK and was just about to crash into bed when I got a text from Barrett. He wanted to meet at the IGA between our houses and I quickly said YES. I got to see his new car and we talked about life again. He doesn’t see it yet, but God has great things in store for this kid.
Anyways, I got home pretty late and by the time I actually fell asleep I knew Crossfit wouldn’t be happening this morning. Such is life.
