Weekend Recap and a Promise

I hope you had a great weekend. I know I did. I spent all weekend resting and being with my family, it was glorious.

Iced coffee at Spencer’s while on a study date with myself. 

Friday night was the usual pizza and Friday Night Lights with my mom and sister. I don’t think I will ever get tired of Dominos thin crust pizza. My mom and I also made no-bake chocolate, peanut butter cookies so you can be sure 2 or 5 of those were inhaled.

Saturday morning I woke up at 10:30. I don’t think I have ever slept in that long. I guess my body needed some serious rest. I woke up and made some buckwheat pancakes with hot cinnamon pears, chocolate chips, peanut butter, and maple syrup. Then my mom and I went on a walk around our neighborhood.

Later that evening, my brother, sister, and I went out to look for Father’s Day gifts. My brother also kindly purchased a Panera salad for me if I promised to watch Friends with him when we got home. I’d say it was a win-win situation.

Sunday was seriously THE BESTTTT. We got to celebrate my amazing dad all day and it was wonderful. I think we need to be celebrating our mother/father figures more don’t ya think? Plus, I convinced my dad to buy me this succulent on his Father’s day because he wouldn’t be a father if I was never his daughter, know what I’m sayin? #spoiled

Later for dinner my dad requested a low-country boil and oh my gosh we do not eat this nearly enough. My mom is a magician when it comes to the kitchen and I had like 2 full plates of this stuff.

All followed by a slice of cookies n’ creme oreo blizzard cake from DQ. Ahhhh, happiness.

This morning featured a super tough crossfit workout that left me sore and frustrated. Why are “snatches” so difficult when it comes to doing the proper technique?

Luckily I survived and came home to this beauty waiting for me to take to Chemistry class.

1/3 cup rolled oats, 1/2 cup almond milk, 1 tbsp chia seeds, 1/2 banana, cinnamon, vanilla extract cooked on the stove. Placed in fridge while I got ready for class. Topped with AB and honey as I walked out the door.

Alright, so here’s my promise. It more like a promise to myself. I feel like I have really been slacking on this whole blog thing. I mean, all the bloggers I follow post up to 3x a week! So my promise to myself is to post Monday and Thursdays for now and maybe another day too but we will see! I want to keep it consistent so you guys keep reading!
