Life has been a little everywhere lately but not to worry, the eating game is still strong featuring lots of plants and lots of sweets (because what’s life without some dessert?)
Mornings have been starting with a big ol’ green smoothie packed with 8 servings of veg. By starting my mornings with this smoothie I can make sure I am getting enough nutrients during the day even if I end up eating more ice cream then I should.
Lunches have been salads of some sort with this head of lettuce my mom gave me. She’s the best. This was a variation of a taco salad where I sautĂ©ed up an orange bell pepper, black beans, garlic, cumin, and chili powder. I added that mix to the romaine and added avocado, salsa, and hot sauce. SO GOOD.
Snacks have been lots of berries…
and dates stuffed with almond butter. Looks like weird, tastes amazing.
Dinner has been tempeh tacos and salads with all the veggies I could find in my fridge.
My salad included: Romaine, roasted broccoli, roasted zucchini, and a black bean burger. I also made my own dressing with apple cider vinegar, liquid aminos, turmeric, pepper, and dijon mustard. I didn’t measure anything so next time I will so I can tell you because it was AMAZING.
Now that we’ve talked about food here are some random pictures of my life lately:
Saturday morning started with a bike ride with this guy. <3
Saturday night ended with lots and lots and lots of dancing at Barrett’s sweet friend Kathryn’s wedding.
Sunday included watching the horse races at Churchill Downs. 4 hours of sleep does not look good on us.
Tuesday included my favorite flower dropped off by my favorite person while I was working.
Tuesday also included this little guy that I rescued on my bike ride. He peed a little, but that’s okay.
And Wednesday was my first day back at CrossFit. As you can see by this lovely picture, I barely made it.
Also, shout out to my AMAZING mother for being my main inspiration when it comes to fitness and for encouraging me to go back to CrossFit. She’s incredible.
