Eats Of The Week

Hi, Hey, How are ya?

I’m pretty good considering the fact that there are 1 1/2 weeks of school left and I only have about 1043821 things left to do. My guess is that you do too if you’re a college student.

But, that leaves you no excuse to eat crappy food. Lucky for you I have compiled some of my quick and easy meals from the past week. They are guaranteed to leave you full, satisfied, happy, and ready to tackle what ever homework comes your way.




When you’ve had a full night of studying and have another full day of homework ahead, you will need some fruits and veggies to wake you up and keep your skin glowing! Helloooo 8 servings of Veg before 8 am 🙂

Eazy Peazy Green Smoozie:

  • 1 frozen banana (I peel mine and stick them a freezer bag)
  • 1 scoop of chocolate Vega One (or your fav PLANT protein powder, none of that crappy whey stuff)
  • 3 cups of mixed power green (spinach, kale, chard…I promise you cannot taste a thing)
  • couple ice cubes
  • 1/2 cup unsweetened almond milk (or your favorite kind of milk)

-Add all the ingredients and blend, blend, blend.

*Best eaten out of a bowl with all your favorite toppings. I used Purely Elizabeth granola and chia seeds.


I have been all about grapes and berries lately. On the left I made a big bowl of grapes, strawbs, and blackberries. On the right I have strawberries, blackberries, and about 2 tbsp of a homemade trail mix.

Lunches have been salads to get in some more veggies, some form of fruit, and something crunchy.

This salad had mixed power greens, red bell pepper, carrots, chickpeas, and a drizzle of lemon dressing.I also had grapes and some brown rice cakes.

This lunch hit the spot when I wasn’t feeling too well!

Steamed sweet potato chunks with almond butter and granola. Ahhhhhhhhh, greatness.


To be honest dinner has been whatever I can find quickly. Last week was Holy Week for Orthodox Christians so that meant I was getting home around 8-9 every night. Lots of frozen burritos were eaten, and I’m okay with that.

I did not get any pictures because I was sooo tired and in a rush.

I have been sick these last couple of days. I think it was due to the zero sleep I got on Friday and Saturday because it was PASCHA ❤


So, I will leave you with this lovely picture of ice cream Barrett brought over to my house to make my throat feel better. That guy sure knows how to treat me right.
