I hope these inspire you to eat some simple, healthy meals!
Blueberry buckwheat pancakes:
-cook buckwheat pancakes according to package and add in 1 tsp cinnamon and 1 tsp vanilla extract
-heat 1 cup blueberries in microwave for 1 minute
-top each pancake with sunflower seed butter
-pour blueberries over pancakes and drizzle with pure maple syrup and a sprinkle of cinnamon
-Enjoy!
Simple Breakfast — Green Smoothie with a granola bar I got at Vegfest
Smoothie:
-2 cups spinach, 1 frozen banana, 1 scoop chocolate Vega One, 1 cup almond milk
Quinoa Stirfry:
-Make 1/2 quinoa according to package, add juice of half a lemon and a splash of tamari
-Saute tbsp of garlic and 1/4 of yellow onion in avocado oil (or oil of choice)
-add 10 mushrooms, 10 snap peas, 2 large carrots, and 1/2 cup chickpeas once onions are browned
-add in quinoa once cooked
-add in 2 tsp of tamari
-stir around quinoa/veg mixture for about 5 minutes
-add in raw pumpkin seed, sprinkle of nutritional yeast, and Sriracha
-divide into two bowls and enjoy an easy lunch for 2 days!
Salad:
-2 cups spinach, leftover quinoa starry, a couple baby carrots, 1/2 small tomato, sprinkle sunflower seeds, and drizzle of balsamic vinaigrette.
I also had a pear and some lime bean chips
Dinner Salad:
-1/2 head of romaine, 1/2 red bell pepper, 1/2 avocado, 1/2 diced up zucchini, 1/4 cup roasted chickpeas, 1 small Alaskan salmon burger, and a drizzle of balsamic vinaigrette.
-and 2 slices of hearty, seed bread
