Lettuce talk about one of the best days, ever. The day started bright and early with my thermos of coffee and my main man on the way to Nashville.
Breakfast consisted of the Lo’s Bowl at Sky Blue Cafe with Barrett’s sweet brother Brian. (Ladies, He’s single) This breakfast was insanely good featuring home fries, all the veg, an over easy egg, happiness, and a bucket of parmesan cheese. (Not pictured: All the coffee I consumed)
Oh, look, an actual picture of my face and not food. I was getting seriously pumped about VegFest. Who wouldn’t want to walk around booths on booths featuring people just as obsessed with health food as you are?
Barrett and I were greeted at the door with a GIANT bag of goodies. Featuring popcorn, water, coupons, foods to sample, stickers, etc. I did purchase the Avocado Oil from Amarillo’s. Avocado oil is similar to olive oil, but you can actually heat it to a higher temperature, which makes it more ideal to cook with than olive oil. When you use olive oil to roast veggies, or any other high heat cooking methods, you lose all the wonderful nutrients the oil contains. In order to retain the nutrients, try putting olive oil in homemade salad dressings instead!
There were so many amazing booths there featuring local businesses of Nashville and some from Texas and North Carolina. Barrett and I listened in on Jess Rice, owner and creator of Avo, Nashville’s first raw and vegan restaurant. She talked about the benefits of eating raw, what inspired her to open Avo, and all about her next restaurant adventures. Basically, I want to be her.
After Barrett and I were tired of being pushed and trampled by so many crazy, hungry, vegans, we decided to make our way closer to East Nashville. We found a free parking spot and walked around a bike shop. We started to get hungry so we decided to walk through some back neighborhoods to The Wild Cow. The houses in East Nashville seriously have my heart. I would move their in a heartbeat if weren’t for the whole “school, having no money thing”
I ordered the Far Eastland bowl with brown rice, garlicky kale, pan-seared tofu, carrot slaw, and a DELISH peanut sauce. Barrett ordered the Maple TLT with maple tempeh, lettuce, tomato, and a garlic aioli. SO GOOD. We finished off the meal with an amazing chocolate chia pudding. I didn’t get a picture because we basically inhaled it.
The day ended with laughing at Barrett getting frustrated in traffic and passing out at 9 pm. It was so nice to go to sleep at my normal grandma hour.
