I came home the other day STARVING…more like, “its 12:30 so I can acceptably eat lunch now”. Anyways, I wanted something quick and I was all out of my usual supply of fresh vegetable so I turned to eggs and frozen vegetables. Frozen vegetables are usually $1 at Kroger and they always come in handy.
Brunch for One:
- Small sweet potato
- Frozen spinach/kale (or any other frozen vegetables you want!)
- Chickpeas
- 2 eggs
- 1 Tbsp Coconut Oil
- Garlic powder, oregano, basil
Start by dicing up that sweet potato and steam until tender. (I microwaved mine for about 6 minutes). Next, add 1 tbsp of coconut oil to a pan and add in the frozen vegetables. Once the vegetables have thawed a little, add a sprinkle of garlic and the chickpeas. Whisk your 2 eggs together and pour in the pan, stirring constantly. Once one side is cooked, flip and sprinkle on basil and oregano.
The potatoes should be done by this point, so drain the water. Remove the eggs from the skillet. You could add parmesan cheese or hot sauce. Or both and be a rebel.
This took all of about 10 minutes to make and was eaten in less than 5. I don’t know if I will ever be a slow eater. Whatever.
